Types of Biryani at Student Biryani: One Style, Five Ways to Order It

Student Biryani doesn’t ask anyone to pick a regional biryani tradition. Its own menu commits to one, Karachi style, consistently, across every version it serves. What actually changes from order to order is the protein, not the region.

There are five ways to order it: Chicken, Mutton, Tikka, BBQ, and Veg. Each one is built on the same Karachi-style foundation, and each one does something different with it.

Student Biryani describes its own biryani as rooted in authentic Karachi style, made with basmati rice and a consistent approach to spice across the menu rather than something that changes dish by dish. That’s the foundation every one of the five variations below is built on, and it’s also the reason there isn’t a sixth or seventh regional variety on the menu to choose from instead.

Chicken Biryani is the most familiar of the five: basmati rice layered with chicken seasoned in ginger, garlic, tomatoes, green chilies, and garam masala, finished with mint and coriander.

Mutton Biryani marinates the meat separately first, in yogurt and ginger-garlic paste, then slow-cooks it with cardamom, cloves, and cinnamon before it meets the rice, a heavier, richer result than the chicken version.

Tikka Biryani starts with meat grilled on its own before it’s layered into the rice, which is what gives it a smokier edge than the other four.

BBQ Biryani goes a step further, building the rice around meat that’s been marinated and grilled, then finished with saffron or food coloring for color as much as flavor.

Veggie Biryani swaps meat for a mix of seasonal vegetables, carrots, peas, beans, potatoes, cauliflower, layered with the same rice and spice base as the others.

Where chicken and mutton specifically pull apart in texture and cook time is its own question, one this article doesn’t need to settle.

Biryani and rice covers all five variations in one place, with ordering available across Student Biryani’s UAE branches.

This breakdown follows the same five-way structure Student Biryani lays out on its own site, Chicken, Mutton, Tikka, BBQ, and Veg, all under one Karachi-style banner rather than scattered across different regional labels.

Five versions of one style turns out to be a more useful way to think about biryani here than four competing regions would be. The protein is the real decision, not the tradition behind it.
